Salmon and Fresh Onion Carpaccio

Ingredients:

For the Carpaccio:

  • 100g salmon (sashimi-grade, block)

  • ½ fresh onion, thinly sliced

  • Water (for soaking), as needed

For the Dressing:

  • 1½ tbsp olive oil

  • 1 tsp lemon juice

  • ¼ tsp salt

  • A pinch of black pepper

  • 1 sprig dill, leaves torn

  • Pink pepper, to taste (optional)

Instructions:

  1. Prepare the Onion:
    Thinly slice the fresh onion and soak it in water for 5 minutes to reduce sharpness. Drain well using a strainer.

  2. Prepare the Salmon and Dill:
    Tear the dill leaves into small pieces. Slice the salmon thinly at an angle.

  3. Make the Dressing:
    In a large bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Add the drained onion slices and toss to coat. Let the mixture sit for 10 minutes to absorb the flavors.

  4. Assemble the Dish:
    Arrange the sliced salmon on a serving plate. Top with the marinated onions and garnish with dill and pink pepper.
