Lemon Baked Salmon and Pasta
Ingredients:
300g salmon (boneless, skinless, pre-cut for easy cooking)
4–5 potatoes, thinly sliced
1 lemon, thinly sliced
2 cloves garlic, thinly sliced
A pinch of salt
A pinch of black pepper
Thyme, to taste (optional)
4 tbsp olive oil
Instructions:
Prepare the Ingredients:
Pat dry the thawed salmon. Slice the potatoes and lemon thinly, and cut the garlic into thin strips.Assemble the Dish:
Line a baking sheet or oven-safe dish with parchment paper. Arrange the sliced potatoes in an overlapping pattern, then place the salmon fillets on top. Evenly distribute the garlic, salt, black pepper, and olive oil over the salmon and potatoes. Finally, top with lemon slices and sprinkle with thyme if desired.Bake:
Preheat the oven to 230°C (450°F). Bake for 20–25 minutes or until the potatoes are golden brown and the salmon is cooked through.Serve:
Remove from the oven and let it rest for a minute before serving. Enjoy as is or with a side of steamed vegetables or a fresh salad.
